View photos of the edible plant Hoffmannseggia glauca (Hog potato), profiled in Wild Edible Plants of Arizona and Wild Edible Plants of New Mexico.
A passage from Wild Edible Plants of Arizona:
A vexing edible plant, it’s the small potato–like tuber that is the sought–after part. Attached to long and thin rhizomes from the foliage above, they lie 2’–3’ below the ground’s surface.
A passage from Wild Edible Plants of New Mexico:
It’s mostly encountered south of Albuquerque, Santa Rosa, and Tucumcari. Colony oriented, where there is one plant, others are close by.
